I have finally worked out a recipe for Mini Chicken or Meat Balls. Codi has gone off food he used to eat by the bucket loads, eg. chicken, meat, cheese. So re-inventing them into delicious creations has been a challenge. So, really excited yesterday when he gobbled down my chicken mini balls and again today mini meat balls.
Recipe
Chicken 200g
Sugar (teaspoon or more depending on toddler’s preference)
Salt & Pepper (more salt if preference for savoury rather than sweet)
Peanut Oil or Olive Oil (2 table spoons)
Parsley (half a handful)
Soya sauce (2 teaspoons)
Dry Breadcrumbs (quarter to half a cup)
The trick is to chop up the chicken into tiny cubes and put all the ingredients into a tall mixer jug, minus the breadcrumbs and mince up until it’s like a paste, if the mixture is getting stuck, you need more oil. This method infuses the ingredients all together and is more flavour-some when you cook it up. The pour in breadcrumbs and mix together, use some breadcrumbs on a plate to lightly coat the mini ball. They should be the size of your thumb. Heat the fry pan with some oil on high then turn down to medium high and cook one side for half a minute and then the other side.
Substitute chicken for lamb, salmon, etc etc.
