Gastro flying around + chicken food poisoning

Arr what the last two weeks have been!!! It is definitely character building (as I huffed to my husband with my head in the toilet bowl.) I must have picked up the gastro virus, as Codi and Clay had very mild versions of it. However, what made ’shit hit the fan’ was my laziness (which is rare with food preparation), in checking the chicken I cooked. Basically, we were in a rush to get to a bbq and took some meat including the marinated chicken from the butchers with us in a small esky. Our thought was that the meat would defrost by the time it got to dinner time. We didn’t end up bbqing the meat. So I put it back in the fridge the that night. I cooked up the chicken which was really yummy the next day for lunch. That night I was hit with the worse food poisoning on record (according to Clay). Since, I had never experienced this ever up until then. Wow I still can’t eat much a week later. Oh well, like I said “character building”.

I just read a post at Wonder Mom. I can relate this blogging stuff can get quite addictive, hehe. I also like her post on Naked Potty Training, a great read considering Codi is 17 months and the latest discussion amongst my playgroup mothers is the “potty training” step.

I had the best day on Thursday with Codi. I think what really made him happy was a morning session eating his breaky (fresh fruit and cereal puffs) whilst watching his dad play tennis with aka Uncle Matt. It was such a beautiful fresh morning with the ocean as the back drop, but I think what made his day was that I was tapping in to the “connection” parents have with their kids, when they quietly bond, give attention without too much fuss, but it’s a “quality” interaction. I think he was really appreciating this and I could sense he loved just hanging out with his mom, just watching a strange interesting game, that involved a bright yellow colored ball being hit with a toy type thing by his dad. Also a toy that mom encourages him to throw and play with on occasions. He even jiggled about in his attempt to say hello to Matt. After eating breaky, he ran around the empty tennis courts after his dad won his first set after months of trying to beat Matt & Pat to no avail. We then said goodbye, as Matt had to play another set (hehe) and chuffed off to playgroup…now usually playgroup is a challenge, but today I really made sure I interacted with him, knowing when he wanted to “wifi connect & interact” so to speak and I decided I would pay attention to this. It worked wonders, I felt so happy. When he lost site of me, he would cry, but I would be in connection within seconds and this only happened a few times, then he really settled, laughed and was his usual happy self..he played with the toys, the playground slides, and played hide and seek with the ceiling fan. It was a major change to a screaming baby hating playgroup. I was so amazed that he even grabbed my hand and took me for a walk. I love this wifi thing, going to use it again tomorrow.

I also forgot to mention, whilst I was cooking my new found recipe for mini meatballs, the second day running (day 1, was the chicken version which I think Codi liked better, or maybe he’d like it more savory and less sweet), anyway to cut the story short, I was also steaming Brocoli at the same time, and BURNED the bottom of the pot, don’t ask me how, haha, I knew I would have another cooking mishap. Run a company and multi-task everything YES, steam brocoli successfully whilst cooking mini meatballs NO… hehehe

Whilst I was searching around, I came across a cool site for moms, called Dotmoms a group blog of 40 moms talking about motherhood, a great daily read. Another great mom blogging site is called A mama’s rant, she makes me laugh like she’s a kindered spirit and says those things you wish you would say out loud, great for days where a laugh is really needed. So onto Technorati, one of these blogs had a link to Technorati, and even though I found it difficult to grasp what “Claim your blog” meant, I blindly inputed all the requested details and entered in my tags and voila, my blog is now in Technorati, pretty cool.

I have finally worked out a recipe for Mini Chicken or Meat Balls. Codi has gone off food he used to eat by the bucket loads, eg. chicken, meat, cheese. So re-inventing them into delicious creations has been a challenge. So, really excited yesterday when he gobbled down my chicken mini balls and again today mini meat balls.
Recipe
Chicken 200g
Sugar (teaspoon or more depending on toddler’s preference)
Salt & Pepper (more salt if preference for savoury rather than sweet)
Peanut Oil or Olive Oil (2 table spoons)
Parsley (half a handful)
Soya sauce (2 teaspoons)
Dry Breadcrumbs (quarter to half a cup)
The trick is to chop up the chicken into tiny cubes and put all the ingredients into a tall mixer jug, minus the breadcrumbs and mince up until it’s like a paste, if the mixture is getting stuck, you need more oil. This method infuses the ingredients all together and is more flavour-some when you cook it up. The pour in breadcrumbs and mix together, use some breadcrumbs on a plate to lightly coat the mini ball. They should be the size of your thumb. Heat the fry pan with some oil on high then turn down to medium high and cook one side for half a minute and then the other side.
Substitute chicken for lamb, salmon, etc etc.

Gees, I’ve had one hell of an afternoon. Don’t you just hate it when you have to go to the shops with your toddler knowing he has woken up on the wrong side of the bed. I know I am guaranteed a mini to major tantrum when I go to the shop, but it’s manageable. What I can’t handle are shop assistants that have NO idea how to hurry up! Even once you’ve distracted your child and managed to get him to settle for a couple of mintues, they still don’t get it when you say, “dear can you hurry I don’t think he’ll last more than a few mintues”. I hate it when I have to go into this particular pharmacy I know time and time again I shouldn’t go into, and low and behold they are the same patronising assistants that drive you up the garden path, it’s either a ploy to piss you off or just show how much more knowledgable they are than you. This blasted lady was so stuck up, the she talked in a way that said “no you can’t just buy the very thing you came in for, such as fungal cream, because you have to wait while we interogate you and insist that you may be mistaken”. She purposely dragged the conversation out, knowing that I obviously did not have the patience or time, especially with my toddler nawing on unpaid chocolates!!! Sometimes when you are around people, you can feel like the most isolated person and mother in the world, but she then also started to irritate another mother and son, so I felt I had some support and decided to interrupt her banter and say “look I’m going now”. Gees what happened to good old fashioned customer service, empathy and a helpful attitude. I will definitely boycott this pharmacy and go to the ones that care that you are a MOTHER!!!! It’s so ironic that they even push about the clinic nurse on Tuesday’s even when you blatantly repeat that you are in a hurry and will check it out next time, arrrr. Never again, the pain is not worth it!!!!
